The queen of cottage cheese, chicken salad and everything-in-between snacking is taking her bite-sized empire to the next level! Bethenny Frankel is launching Supermodel Cafe, a fully designed pop-up in East Quogue, N.Y., opening August 13th.

The concept is inspired by the “supermodel snacks” and better-for-you recipes that have become staples of her TikTok and Instagram videos, and yes, they’re getting a brick-and-mortar home.

The menu reads like a Bethenny fan’s dream: lattes, lighter bagels, protein-packed spreads and dips, caviar, and low-calorie cheesecakes, plus gifts, cheeky merchandise and products from brands she loves. It’s the latest chapter in her decades-long career of reinventing familiar foods, from sneaking butternut squash into mac and cheese to putting peas in guacamole.

For Bethenny, “supermodel” is about confidence, not a body type. “Supermodel’s a better term than Skinny Girl,” she says. “It has a tongue-in-cheek wit to it, a fun to it, a flirt to it. You’re in on the joke.” And if the crowds love it? She’s ready to keep going.

The pop-up came together in just three weeks, but B says she’s approaching it the same way she approaches social media: by letting her audience decide whether it has staying power.

Speaking to People about the venture she said, “If it doesn’t hit, the people will tell me,” she says. “I’m always pretty open and vulnerable. They’ll come in and they’ll tell me if it’s good, if it’s not good, if it’s at the level, if it’s not at the level. The crowds will determine whether there’s a demand for this.”

And yes, one customer is already lined up: her 16-year-old daughter. “She’s excited,” B says. “The Nepo baby asked me if she’s going to have to wait online.” Adds Frankel with a laugh: “I said that you will not have to wait online.”
